This salmon is my absolute favorite. It has 3 of my favorite things: it’s spicy, has lots of fresh basil and lots of fresh garlic. And it is so simple…especially if you make your hubby do the grilling like I do!
I haven’t tested with other types of chile paste, but I think it would go with just about anything.
I wish I could take credit for this recipe, but I definitely can’t. Chef John is the man for this one.

Spicy Ginger Glazed Salmon with Basil
Servings: 4 servings
Ingredients
- 4 8 ounce fresh salmon fillets
- salt to taste
- 1/3 cup cold water
- 1/4 cup seasoned rice vinegar
- 2 tbsp brown sugar
- 1 tbsp hot chile paste such as sambal oelek
- 1 tbsp finely grated fresh ginger or 1 tsp powdered
- 4 cloves garlic minced
- 1 tsp soy sauce
- 1/4 cup chopped fresh basil
Instructions
- Preheat grill for medium heat and lightly oil the grate.
- Season salmon fillets with salt.
- Place salmon on the preheated grill; cook for 6 to 8 minutes per side, or until it flakes easily with a fork.
- Meanwhile, combine water, rice vinegar, brown sugar, chile paste, ginger, garlic and soy sauce in a small saucepan over medium heat.
- Bring mixture to a boil, reduce heat to medium-low and simmer until barely thickened, about 2 minutes.
- Sprinkle basil on top of salmon; spoon glaze over basil.
