Roasted Green Beans

When I first came across this recipe, I thought, ‘oh yeah, that would be good’, because I love green beans, and am a fan of them in pretty much any concept.  However, they were better than good.  They were great…downright fabulous!

I’ve been ranting and raving for awhile now about roasted vegetables.  It blows my mind that something so simple can be so delicious.  These are by far my new favorite.  Fresh green beans, olive oil, salt and pepper.  That’s it.  I mean, how ridiculously simple is that?  This method gives the beans a whole new flavor that is delicious, and sweet and roasty-tasting, and pretty much just delicious.  Oh wait, I already said that, didn’t I?

Next on my list of veggies to try roasting? Leeks!

Roasted Green Beans

Servings: 4 servings

Ingredients

  • 1 lb green beans stem ends snapped off
  • 1 tbsp olive oil
  • Freshly ground salt & pepper

Instructions

  • Preheat oven to 450°F. Line rimmed baking sheet with aluminum foil.
  • Spread beans on baking sheet. Drizzle with oil and sprinkle with salt and pepper. Using hands, toss to coat evenly. Distribute beans in even layer. Roast 10 minutes.
  • Using tongs, turn green beans and redistribute evenly. Continue roasting until beans are dark golden brown in spots and have started to shrivel, 10 to 12 minutes longer.

    So after sampling some of your leftover green beans last week I wanted to make these. So I wrote ‘fresh green beans’ on my grocery list. My husband ended up getting groceries this week and I set out this afternoon to make these. I opened the bag of green beans and he had bought two handfuls worth. Hahaha. To his credit, my list didn’t say how much fresh green beans to buy. I roasted the few I had anyway and they were so tasty! My only complaint is that there wasn’t enough to satisfy my craving for them. :)

    I had the privilege of tasting this direct from the source at the GH’s home! They were fantastic. I believe the only way to improve this recipe is to make them with Green Beans fresh from our garden this summer! It’s on the To Do List!
