Oh my goodness. Talk about delicious. Have you ever had “Jam-Jams”? My Mom always made them when we were kids and they were The. Best. Ever. Thin, soft oatmeal cookies, sandwiched, with raspberry jam in between. Jam-Jams were always a source of bickering between me and my brothers as to who had had more and who got the last one. These squares are the next best thing. They taste exactly like Jam-Jams, but in bar form (and are far less work to make).
I added crushed almonds and drizzled chocolate to the recipe, because really, what kind of dessert is NOT better with almonds and chocolate?

Raspberry Oatmeal Squares
Servings: 12 servings
Ingredients
- 1/2 cup packed brown sugar
- 1 cup all-purpose flour
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 cup rolled oats
- 1/4 cup crushed or chopped almonds
- 1/2 cup butter softened
- 3/4 cup raspberry jam or whatever flavor you have on hand!
- 1/4 cup semi-sweet or sweet chocolate chips or wafers
Instructions
- Preheat oven to 350°F. Grease one 8-inch square pan, and line with greased foil.
- Combine brown sugar, flour, baking soda, salt, rolled oats, and almonds in a medium-sized bowl. Rub in the butter using your hands or a pastry blender to form a crumbly mixture.
- Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
- Bake for 35 to 40 minutes in a preheated oven, or until lightly browned. Allow to cool.
- Melt the chocolate over a double boiler or in the microwave at 30 second intervals, stirring constantly. Drizzle over pan. Allow to set before cutting into bars, about 5 minutes.

February 16, 2014 at 3:17 pmI make these using a blend of gluten free flour mixes from BRM, gluten free all purpose baking flour and rice flour (equal parts). They are then gluten free Raspberry Oatmeal squares with whatever else you throw in there…like finely shredded coconut. Thanks for the great recipes! Dan
