My good friend Lyssa (cake, cupcake, and all things baking goddess) had us over for supper a couple weeks ago and served us bacon wrapped asparagus. It was delicious and reminded me that I had a recipe for prosciutto wrapped asparagus that I had been waiting to try for a couple years. Her recipe motivated me. When I went to search for it, alas! I had thrown it out because it had been so long.
But I was determined to make it, so last night I went searching for the perfect recipe. I came across this recipe from allrecipes.com, and knew I had to try it.
The recipe calls for Neufchatel cheese, which amazingly, I don’t keep on hand. ;) However, after a Google search, I discovered that Neufchatel is a lower-fat version of cream cheese. Low fat? Pfftt…who wants that? I happened to have “light”, spreadable cream cheese on hand, so I thought I’d give it a shot.
Mmm…mmm…delicious!
Prosciutto and Cream Cheese Wrapped Asparagus
Ingredients
- Prosciutto slices
- 1 lb asparagus spears ends snapped off
- 1/4 cup light spreadable cream cheese
Instructions
- Preheat oven to 450°F.
- Spread prosciutto slices with cream cheese. Wrap slices around 2 or 3 asparagus spears. Arrange wrapped spears in a single layer on a greased baking sheet.
- Bake 15 minutes in the preheated oven, until asparagus is tender.
