Garlic is one of my favorite foods. Any kind of garlic really. But then roast garlic, or caramelize it and you’ll have me drooling in seconds. I have to restrain myself to make sure I don’t eat so much that hubby won’t even sit beside me.
This recipe is always one of my fallbacks. Even people who are not huge garlic fans, or those who don’t like cooked vegetables (like my brother – and no, he’s not 10, he’s 23), always like this dish.
The best part? It calls for a whole head of garlic!

Garlic Green Beans
Servings: 6 servings
Ingredients
- 1 tbsp butter
- 3 tbsp extra virgin olive oil
- 1 head of garlic peeled and sliced or slivered
- 8-10 cups frozen or fresh green beans approx., cooked
- freshly ground pepper and salt to taste
- 1/2 cup grated cheese I like to use a mixture of mozzarella and Parmesan
Instructions
- In a large skillet over medium heat, melt butter with olive oil. Add garlic and cook until lightly browned, stirring frequently.
- Stir in green beans, and season with salt and pepper. Cook until beans are heated through, 3-5 minutes.
- Stir in cheese until melted, and serve.
