Who doesn’t love coconut oatmeal cookies? If you don’t, maybe you should go see a doctor. Coconut oatmeal is definitely my favorite, and this recipe is delicious. A warning – you really have to work with the dough, as it tends to be on the dry side. But look at it this way – it’s a really great workout for your arms!
Because the dough is so hard to work with, these are definitely not overly pretty cookies, but believe me – the taste makes them SO worth it.
Coconut Oatmeal Cookies
Ingredients
- 1 cup butter or margarine softened
- 1 cup white sugar
- 1/2 cup brown sugar lightly packed
- 1 egg beaten
- 1 1/2 cup oatmeal
- 3/4 cup coconut
- 1 1/2 cup flour
- 1/4 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
Instructions
- Preheat oven to 350°F.
- Combine flour, salt, baking powder, and baking soda together in a small bowl. Set aside.
- Cream butter or margarine and sugars together in large mixing bowl.
- Beat in egg.
- Stir in oatmeal and coconut.
- Stir in flour mixture.
- Roll dough into walnut sized balls (this is where you'll need to get vigorous and work out those muscles!) and place on lightly greased baking sheet. Press down gently with a fork.
- Bake at 350°F for 15 minutes.
