A palmier is a classic French pastry, and there are many different variations that you can make, both savory and sweet. The one I make contains Nutella and toasted hazelnuts.
Chocolate and Hazelnut Palmiers
Ingredients
- 13 oz ready-made puff pastry dough I didn't measure mine and realized after I only used 6.5 oz
- 8 tbsp chocolate hazelnut spread
- 1/2 cup chopped toasted hazelnuts I've also used Skor Bits, which are just as tasty and easier!
- 5 tsp superfine sugar I use regular granulated
Instructions
- Lightly grease a cookie sheet. On a lightly floured surface, roll out hte puff pastry dough to a rectangle about 15 x 9 inches in size.
- Spread the chocolate hazelnut spread over the dough using a spatula (this is the hardest part, and I find a butter knife works a bit better), then scatter the chopped hazelnuts over the top.
- Roll up one long side of the dough to the center, then roll up the other side so that they meet in the center. Where the pieces meet, dampen the edges with a little water to join them. Using a sharp knife, cut into thin slices. Place each slice onto the prepared cookie sheet and flatten slightly with a spatula. Sprinkle the slices with the sugar.
- Bake in a preheated oven at 425°F for about 10-15 minutes, until golden. Transfer to a wire rack to cool.
