This dish is a great accompaniment to any type of fish. I love how fresh and healthy tasting it is. If you’re a typical “white rice” type of person, give brown rice a try – you might be pleasantly surprised.
Brown Rice With Vegetables
Ingredients
- 1 cup brown rice plus 2 cups vegetable stock cook or steam rice
- 1/2 cup zucchini cubed
- 1/2 cup red pepper diced
- 1 cup fresh mushrooms roughly chopped
- 2 green onions green and white parts diced
- 1 tbsp butter
- dash of dill
- lemon juice
Instructions
- Sautee veggies in a large skillet in olive oil over medium heat until tender.
- Add cooked/steamed rice to skillet and cook 5 minutes.
- Add butter, lemon juice, and dill, and stir well.
