What to do on a rainy day? Bake muffins of course! Hubby is going on a fishing trip up north today, and when we were getting the groceries he needed to bring with him, he was going to buy some pre-made muffin mix. He said, “You can get a pretty good blueberry/cranberry bran mix”. And then I looked at the package he picked out. And I’ve had those. And while they may be passable for a 19-year-old bachelor, I just couldn’t in good conscience let him buy it.
Because I have this recipe:
It’s delicious. It’s healthy. And best of all, it’s homemade.

Bran Graham Muffins
Servings: 2 dozen
Ingredients
- 3 cups bran
- 3 cups graham cracker crumbs
- 1 1/2 cups + 2 tbsp flour
- 3/4 cup brown sugar
- 3/4 cup wheat germ
- 1 tbsp baking soda
- 3/4 tsp salt
- 1 1/2 cups raisins
- 3 eggs
- 1 cup oil
- 3/4 cup molasses
- 2 1/4 cup buttermilk
- 1 1/2 tsp vanilla
Instructions
- Preheat oven to 375°F. Lightly grease muffin tins.
- Measure all dry ingredients into a large bowl. Mix in raisins.
- In a medium-sized bowl, beat eggs until frothy. Add oil, molasses, buttermilk, and vanilla. Beat to mix. Pour over dry ingredients. Stir just to moisten.
- Spoon batter into prepared muffin tins, filling them right to the top.
- Bake for 20 minutes.
