Continuing along the peach theme, I made these kabobs a few nights ago. I’m a sucker for fruit as an accompaniment to a main course or side dish, and anything wrapped in bacon or containing bacon gets a huge “Hurrah!” from me. I mostly loved the simplicity of this recipe. Sometimes I find that I can get so carried away with a huge list of ingredients that I don’t take enough time to enjoy the natural flavors brought out by most foods.
We used a chipotle barbecue sauce, and oh my goodness, the combination of the sweet peaches with a touch of heat was to die for. They were so good that I forgot to take a picture of the finished product. Oops!

Bacon Wrapped Chicken and Peach Kabobs
Servings: 4 servings
Ingredients
- 1/4 cup barbecue sauce of your choice
- 1 lb. boneless skinless chicken breasts cut into 16 pieces
- 2 peaches peeled, each cut into 8 pieces
- 8 slices bacon cut crosswise in half
Instructions
- Heat barbecue to medium-high heat. Reserve 2 tbsp barbecue sauce.
- Wrap each chicken piece with bacon. Thread alternately with peach pieces onto 4 skewers. Brush with remaining barbecue sauce.
- Grill 12 to 14 minutes or until chicken is done, brushing with reserved sauce the last 2 minutes.

October 5, 2011 at 12:49 pmSounds delicious and (kid friendly)! I thought about making this, but baked in the oven (because I have no charcoal to grill with). Wasn’t sure how it would taste, so I Googled it to see if others had ever made it and I found you! Yay :)
