A 3-Year Blogiversary!

Skillet Huevos Rancheros

This month marks the 3rd anniversary of this blog. While 3 years seems so short in the grand scheme of things, at the same time, it also feels like so much has been accomplished and so much has changed in just a few years.

On February 1, 2011, with my then 3-month-old baby by my side, I wrote my very first blog post. I then went on to write three more that day, three the following day, and so on, until I had posted 33 times that first month. If only I had that kind of time now. Now, I’m fortunate if I can get three recipes up in a month!

As with all blogs in the beginning stages, the content and photos are embarrassing.

Here’s a screenshot of one of my posts that first day:

Oy. The pain this gives me. But if we didn’t have that to look back on, we wouldn’t be able to see how far we’ve come, would we?

I meant to write a “year in review” post, but one thing led to another and it turned into “A Year (and a Half) in Review“. Then by the time the 2-year anniversary came around, it seemed silly to do another post so soon. This year I’m being proactive (except not really, because I’m still 12 days late) and posting an anniversary/year in review post, mostly on time.

So what has this last year brought? Here are a few highlights: (click on the image to get the recipe)

Peppered Strawberry Flambé

Vietnamese Noodle Bowl

Skillet Huevos Rancheros

Date Squares

Roasted Root Vegetable Galette

Stacked Beet and Arugula Salad

Light(er) Fettuccine Alfredo

Slow Cooker Braised Beef Short Ribs

Apple Danish Bars

And with that goes another year. Oh me, oh my, how time flies. Since it’s been awhile, I figured 3 years was a good time to give my About page a little sprucing up as well. Take a look when you get a minute and let me know what you think, will you?

We’re expecting our 2nd child within the next couple weeks, so you may not hear from me for awhile, but don’t worry – I’ll be back!

As always, thanks for reading!

xoxo
